This week we have another semi-failed recipe, oven cooked steak, and a crock pot dish. I love trying new recipes but with trying new things, they don’t always work. I also continued with having lots of veggies this week. Corn, green beans, carrots, cauliflower rice, and vegetable chips. Yum yum.
This is my weekly meal plan on $60 or less! (my average prices do not include spices, butter, oil, etc)
Monday
Chicken Watermelon Tacos (@$9.50)
- Chicken $3.98 (2.99 lb, Fresh Market)
- Watermelon $0.40 (⅛ , $2.99 Kroger)
- Onion $0.47 (Vidalia, Trader Joe’s)
- Jalapeno $0.24
- Tomatillos $0.82
- Lime $0.79

- Cotija Cheese $0.99 ($1.99, Farmer’s Market)
- Sweet Corn $0.44 (half can, Trader Joe’s)
This was another Food Network recipe. For me, these recipes seem to be hit or miss. This one was a miss. The chicken mixture was quite yummy but the watermelon salsa stuff was not to my liking. Adding the cheese to the watermelon mixture gave everything a weird texture. I would try again without using the cheese or adding the cheese at the end.
Tuesday
Oven Broiled Steak (@$7.50)
- Eye of Round Steak $5.62 (4 steaks)

- Mac n Cheese $1.00 (Annies)
I marinated the steak for most of the afternoon with a little olive oil, worcestershire sauce, salt, and pepper. Then broiled in the oven for about 5 minutes on each side. One steak was a little larger and needed to be cooked an extra minute.
Wednesday
Mojo Pork (@$13.50)
- Pork Roast $8.44 (4 lbs)

Crockpot! I repeat this recipe often since my toddler loves it. I usually use a smaller pork roast but this one was on sale so why not, more leftovers. For this dish, I put the pork and half the bottle of marinade in the crockpot (with a liner, makes clean up SO much easier) for 7 hours on low. Then use tongs to shred the meat. It should fall apart very easily. Mix the beans, diced avocado, and corn together. Yum! And again this made a lot of leftovers even with dinner guests.
Friday
Pork Tenderloin (@$9.50)
- Peppercorn Pork Tenderloin $3.94 (BOGO + coupon, Kroger)
- Cauliflower Rice $1.99
- Carrots $0.69 (can, Kroger)
I cooked the pork according to package instructions, 375 for 25-30 minutes or 155 degrees. The cauliflower rice is amazing to add extra veggies to the meal.
Saturday
Chili Cheese Hotdogs (@$7)

- Shredded Cheese $1.19(½ bag)
- Buns $1.00
- Chili $0.00 (Frozen Leftovers)
- Vegetable Chips $0.99 (½ , Trader Joe’s)
Today I needed a quick throw together meal for a busy weekend. And everyone always loves messy chili dogs. Vegetable chips help make it a little healthier. I boil my hot dogs but one day I will be able to grill them.
5 meals for around $50.
**Bonus Salad**
I found a delicious fruit salad recipe that I used for the Fourth. I wanted to share it with you because I know I will be making it a few more times this summer. I think the combination of flavors is different but tasty. (recipe) I did omit the jicama. It is annoying to cut and doesn’t offer much flavor. I used more watermelon instead. Enjoy!
More watermelon goodness,
Freeze watermelon cubes to put in chilled prosecco or make a watermelon mojito. (muddle a few watermelon chunks with a lime wedge, mint leaves, and sugar. Add rum, ice, and something fizzy. Sprite, Soda Water, or Ginger Ale)
