Weekly Meal Planning on $60 or Less: Shrimp Poboys

This week has a really great mix of dishes, if i do say so myself! We’ve got shrimp poboys, vegetarian spinach quiche, a crock-pot dish, a one pot dish, and a special yummy cocktail for mom! Lots of new meals to try this week, so I hope you enjoy! Monday

Turkey Breast & Stuffing (@$6.25)turkey and stuffing

  • Turkey Breast $4.49 (Manager Special, Kroger)
  • Boxed Stuffing Mix $1.00
  • Green Beans $0.60

Since my household is getting over summer colds, I felt nice filling comfort food was in order. I oven roasted a turkey breast, used boxed cornbread stuffing, canned green beans and homemade gravy. I like to make my stuffing but when you are a little under the weather, that can be a lot of work. I have included the recipe for homemade gravy.

 

Tuesday

Chicken Cordon Bleu Pasta (@$7.75)chicken cordon bleu pasta

  • Chicken Breast $2.44 (thin sliced, Manager Special, Kroger)
  • Ham $1.93 (½ ham steak)
  • Pasta $1.00
  • Swiss Cheese $2.29

This Recipe is a quick one pot dish. Minimal prep and minimal cleanup. My favorite kind of meal. I ended up using the whole box of pasta since after since there was not much left in the box anyway. To compensate, I added an addition 1/2 cup water and a little more dry mustard. I think I used a little more chicken too. 

 

Wednesday

Barbacoa Bowls (@$20)barbacoa bowls

  • Chuck Roast $14.20 (3lbs)

  • Bell Pepper $0.33
  • Peppers $0.12 (jalapeno)
  • Rice $1.16
  • Black Beans $0.89
  • Shredded Cheese $1.20 (½ package)
  • Guacamole $0.98 (½ container, Manager Special, Kroger)
  • Sour Cream $0.45 (¼ container)

Crockpot! I had to make a few substitutions to this recipe since I apparently forgot to buy some things. Oops. I did not buy chipotle peppers or green chiles. So used a few sweet & hot cherry peppers and 1/4 cup of Green Dragon Salsa Verde and a yellow bell peppers. I think it came out quite tasty but I do plan on making again (only correctly) We did have dinner guests (8 people total) but there was enough leftover meat for lunch tacos for Aryssa and I.

 

Friday


Spinach Quiche (@$9)

  • Plain Yogurt $0.69
  • Chopped Salad $3.00 (Dole bagged chopped salad)

My friend Desiree was kind enough to share her Grandma’s recipe with me. I have never made quiche before but I think it turned out well. It was an little wet in the middle but cooked through. Next time I will put foil over the edges of the crust so they don’t burn and I can cook it a few minutes longer. Gas ovens can run a little hot sometimes.  

 

Saturday

  • Cheese $1.23 (½ package)
  • Remoulade $1.50 (½ jar)
  • Lettuce $0.49 (¼ bag)
  • Vegetable Chips $1.99

Not everyone puts cheese on their poboys but I do. So yummy. This time I used white american. Place the cheese on the bread and toast until just melted. This time I used frozen breaded shrimp because it was on sale plus it makes the meal prep almost nothing. Decided to go with veggie chips as a side since there was bread and breading with the poboys. 

5 meals for around $55

**Bonus** I think this week calls for drink. I drink vodka and Moscow Mules are light and refreshing (and simple). A little vodka (about 1 1/2 oz or more depending on your preference), some ice cubes, a little ginger beer like Goslings, and  a few squeezes of lime. That is it. The cute copper mugs are nice but you can use any glass or bowl or vase. It’s super simple and ads a nice change to your typical cocktail, not too sweet and not too strong.
