Weekly Meal Planning on $60 or Less: Fall Dishes

Can I just say that I cannot get enough of all these yummy fall dishes? Roasted vegetables, squash, pumpkin, soups, and stews… its comfort in a bowl. I swear I will gain 5 pounds before Christmas with all these stick to your ribs style meals!

Cooking is all about spending time with those you love, making memories and opening up conversation and these fall dishes won’t disappoint. Its November (already!) and the month of remembering who and what we are thankful for. Try out some of these dishes on your family and make a point to tell each other what you are thankful for at dinner every night this month. You might be surprised by what they come up with!

This is my weekly meal plan on $60 or less! (my average prices do not include common spices, butter, oil, etc)

 

Monday

Butternut Squash Pasta (@$10.25)butternut-squash-spaghetti

  • Butternut Squash Pasta $1.99
  • Ground Beef $3.10 ($2.99 lb, Fresh Market)
  • Marinara Sauce $1.59
  • Zucchini $0.98
  • Breadsticks $2.50

Trader Joe’s had a butternut squash pumpkin shaped pasta. Yum! I topped it with spaghetti sauce. I added ground beef browned with garlic and basil as well as diced zucchini.

 

Tuesday

  • Gnocchi $2.19
  • Bacon $1.99 (½ package)
  • Cauliflower $2.49
  • Capers $0.44 (⅙ jar)
  • Pine Nuts $0.75 (⅙ jar)
  • Scallions $0.24

(recipe) I usually have pine nuts and capers on hand so this was a quick throw together meal. I actually used leftover bacon from breakfast so I added a little extra oil to my pan.

 

Wednesday

Chicken Tortilla Soup (@$9.50)tortilla-soup

  • Chicken $3.58
  • Rice $0.58
  • Soup Mix $5.19

This is made from a soup base sold at Kroger. We had dinner guests so I added ½ cup of rice, 1 ½ cups chicken stock and a tablespoon of chili powder to make it a little larger.

 

Friday

(recipe) OMG this dish was absolutely amazing you guys!! I did not change a thing except to serve it with toasted pretzel buns. Definitely a must try and a new addition to our fall dish favorites list.

 

Saturday

Leftovers & Pizza (@$2.50)

  • Frozen Pizza  $2.50

We had a long day of errands and my original plan did not get done. But I had a frozen pizza and pumpkin pasta leftovers from last night.Sometimes life just gets busy so I always like to have a frozen pizza or two on hand if needed. Last week, Target had DiGiorno pizzas on sale and  buy one get one free so I stocked up.

 

5 meals for under $40

 

My bonus this week is a yummy and super easy fall dessert. Pumpkin Pecan Cobbler!!! (recipe) This directions seem a little odd but believe me that it comes out AMAZING! I doubled the recipe and cooked about 10 minutes longer and ohhhhhhh, perfection!
