Weekly Dinner Menu $60 or Less: Crockpot Fun

This week has a few repeat dishes and some crockpot fun as well. Yah Food! We did end up having a few dishes that did not quiiiiiiiite turn out how I wanted, but that happens. In the next few weeks I will be trying a bunch of new fall inspired dishes, and i will let you know whats a flop and what’s fabulous.

This is my weekly meal plan on $60 or less! (my average prices do not include common spices, butter, oil, etc)

 

Monday

Calzone(@$12.50)calzone

  • Ground Turkey $2.99
  • Shredded Mozzarella $1.20 (½ package)
  • Bell Pepper $0.98
  • Pizza Dough $2.59
  • Egg $0.22
  • Marinara Sauce $1.59
  • Salad $3.00 (bagged Dole Chopped Salad)

Calzones are my love language and this recipe definitely hit the spot. I tried to make mine a little less greasy so I used ground turkey browned with a little olive oil and Italian seasonings instead of traditional beef. Also, I used diced bell pepper in place of the giardiniera and added a chopped side salad to get those veggies in there.

 

Tuesday

Crockpot fun! This is a repeat dish for us, but a super popular and tasty one that everyone wants seconds of. Potatoes are coated with olive oil, salt, and pepper then wrapped in foil and cooked in the crockpot on low for about 8 hours. Once cooked through I topped with broccoli cheese soup, steamed broccoli and more cheddar cheese. Yummmmmy!

 

Wednesday

Chicken & Rice Soup (@$9.50)

  • Chicken Breast $3.03 ($2.99 lb, Fresh Market)
  • Rice $0.58

  • Carrots $0.50
  • Celery $0.60
  • Chicken Stock $1.79
  • Cream $2.50

Crockpot fun! (recipe) I did learn a wonderful lesson with this recipe, substituting white rice just doesn’t work you guys. The rice takes in too much moisture and ends up a gloppy mess (hence no picture). It tasted yummy but did not look very appetizing. Lesson learned.

 

Friday

This is another repeat dish. I found a gigantic bottle of the Badia Mojo Marinade at the Farmer’s Market. I am so excited!! Looking forward to trying this on shrimp. I marinated the pork chops and then baked at 375 for about 30 minutes or 165 degrees. 

 

Saturday

Crockpot! I picked up an extra shift at my job this week so I wanted another crockpot dish to make dinner easy for the sitter. (recipe) Not a favorite. Tasted too much like baked beans and that is not an appetizing dinner. The toddler ate all her food but the adults were a little eh.

 

5 meals for $45 this week! Amazing!
