Cheesy Grilled Stuffed Tomatoes

Whats for Dinner tonight?  In our house we are making Cheesy Stuffed Grilled Tomatoes and Grilled Ribeye Steaks- YUM!

In our house we tend to grill 4+ nights a week when dear husband is home.  It makes cleanup a breeze and it does not heat up the house in the hot summer.  Consequently, I try to make sides that can be cooked on the grill along side our meat of choice.

These tomatoes are so yummy – especially when you have really ripe homegrown summer tomatoes.  My 2yr old eats tomatoes like grapes or any other fruit.  He LOVES them.  He has recently been obsessed with “white cheese” (aka Parmesan Cheese) so I thought this would be a great side to make for dinner.

These tomatoes are equally delicious in the oven cooked under the broiler.

Ingredients:

  • Ripe Tomatoes
  • Ricotta Cheese
  • Parmesan Cheese
  • Seasoning Blend of Choice
  • Black Pepper
  • Optional: Pimento, Artichoke Hearts, Lemon Zest

To Prepare The Tomatoes:

  1. For the tomato filling I combine ricotta cheese, Parmesan cheese, greek seasoning, and black pepper in a small bowl.  The amount of each is personal preference and also depends on the number of tomatoes you are making.  For approx 6 tennis ball sizes tomatoes I use about 1 cup of ricotta and 1/2 cup Parmesan.
  2. If the tomatoes will not stand up on their own cut a small slice off of the bottom to give it a flat surface.
  3. Cut a half dollar size hole in the top of each tomato and then scoop out most of the seeds and flesh from the inside of the tomato.
  4. Put the ricotta mixture inside each tomato. Sprinkle a little bit of Parmesan cheese on top of each tomato.
  5. Place the tomatoes in either a grill safe container or an oven safe dish.
  6. Cook the tomatoes until they are soft and starting to brown.  The tomatoes should be fairly soft and hard to keep intact if they are cooked properly.

It takes me about 5 minutes to prep this side and the dear husband just needs to put them on the grill about 10 minutes before he adds the steaks.  Dinner does not get much quicker than this!  Let me know what you think of this dish if you try it!
